Nicks Festive Christmas Filo Pastry Mincemeat Parcels Recipe

The festive season is upon us and we wanted to make something for Vlogmas, a little different than the usual mince pies we make.
This very easy-to-do recipe is a twist on traditional mince pies but is great for anyone who loves a traditional Christmas sweet snack
Don’t forget to add in some clotted cream if you want to make them even more luxurious
Items you will need
- One jar of mincemeat
- One pack of ready-rolled filo pastry (filo pastry is very time-consuming to make yourself but go for it if you have the time)
- Butter
- Icing sugar (optional)
- Muffin tray
- Pastry brush
How to make it
- Open the filo pastry and cut each sheet into small squares. We used three sheets to make sure the parcels weren’t too flimsy, you can use as many layers are you like
- Layer the filo squares into the muffin tray, crisscrossed, to resemble a bird’s nest.
- Melt a spoonful of butter in a cup in the microwave and use the pastry brush to coat each parcel
- Fill each parcel with mincemeat. You could get as creative as you want at this point and add other fillings along with the mincemeat, Custard, chocolate, or whatever you fancy.
- Grab some more filo pastry and cut it into small strips. Place these strips on top of the mincemeat to create a top for the parcels.
- Heat the oven to around 150 (gas mark 2) and keep a close eye on them. The filo cooks very quickly and can burn quite easily. Ours were done after around ten minutes. We sat and watched them brown.
- Remove from the oven, check the mincemeat is cooked, allow to cool and sprinkle with icing sugar for decoration
